I became a vegetarian several years ago and have since been on a mission to recreate my favorite dishes to be vegetarian or vegan. It's forced me to see food from a whole new perspective and I have discovered so many new foods and dishes that I may not have ever found otherwise. I enjoy cooking meals for my friends and family, most of whom are not vegetarians, but they still enjoy my food and I even receive requests.
